Some of the products developed/ improved by the students includes coconut chips, imitation soy sauce, VCO dressing, buko pie, buko juice, etc. The researchers showcased their works in a form of poster and oral (5-Minute Thesis) presentation competition during the 8^th Dr. Lourdes J. Custodio Research Festival, which was held at the Albertus Magnus Building, College of Education with the theme “Empowering and Transforming Sustainable Communities through Research.”

Both the 5-Minute Thesis (5MT) and Poster presentation happened last May 10, 2023. The goal of the 5MT is to enable the students to explain their works to non-food technologists in a manner that they can easily understand, hence, the judges were composed of people from various fields, including Ms. Florimae E. Paimalan, RND, MHPEd (Academic Staff, Department of Nutrition and Dietetics), Ms. Leidy May G. Alanajes, MA (Academic Staff, Department of Filipino), and Assoc. Prof. Grace F. Azares, RCh, MSc (Academic Staff, Department of Food Technology). Winners of 5MT are Mr. Matthew Stephen Andrei C. Sy and Ms. Kaitlyn Mary E. Concepcion who tied in the 3^rd Place, Ms. Mikaella Erica Cachero (2^nd Place), and Mr. Dominique S.G. Lizardo (1^st Place).

Likewise, the judges for poster presentation is composed of Mr. Emmanuele V. Mistades, RND (Academic Staff, Department of Nutrition and Dietetics), Ms. Jerimae S. Bernardo, MSc (Academic Staff, Health Allied Strand – USTSHS), and Mr. Jairus Kent S. Vital, MTM (Academic Staff, Department of Food Technology). With the theme Future of Food – Innovation, Sustainability and Health, the congress was attended by about 1500 participants from more than 80-100 IUFoST adhering bodies and supporting countries around the globe.

Arenas showcased her research on the Effects of Steeping Time and Temperature on the Antioxidant Activity and Phenolics of Pili (Canarium ovatum Engl.) Pomace Brew. This was a study conducted with her BS Food Technology thesis advisees namely Ma. Nicole Cybele A. Carvajal, Audrey Mae C. Lorenzo, Ana Mikaela M. Magpantay, Moira Denice B. Mirafuentes, Eunice Joy M. Molaneda, Christianne C. Reyes and Jazlyn Bon O. Yu. Together, the group found out that hot extraction of dried pili pomace resulted in greater quantities of condensed tannins, total phenolics, flavonoids, and anthocyanins compared to cold extraction. In addition, levels of phenolic compounds and antioxidant activity increased with increasing extraction time and temperature.

Meanwhile, her second poster titled “Pili (Canarium ovatum, Engl.) pomace in beef patties: impact on quality and acceptability”, co-authored by Essence Jeanne L. Del Castillo, Kevin Rae R. Ngo and Herlyn A. Villamento, outlined part of the findings obtained from their recently completed DOST-PCHRD funded project. This research work highlighted the potential of pili fruit pomace as a functional ingredient to minimize production costs while enhancing the nutritional and technological qualities of comminuted processed meat products such as burgers. The addition of pili pomace improved the ash, fat, protein, carbohydrates and total dietary fiber contents of beef patty and increased its total phenolic content and antioxidant activity.

Arenas is affiliated with the UST – Research Center of the Natural and Applied Sciences and The Graduate School. She is also an administrative council member of the IUFoST Early Career Scientists (ECS).

Arenas presented the research project during the Department of Science and Technology Collaborative Research and Development to Leverage Philippine Economy (DOST-CRADLE) symposium held on January 18, 2022.

Industrial food processing generates massive amounts of waste, and the unused byproducts, which are commonly disposed of and not maximized, lead to environmental problems and economic loss for businesses, particularly micro, small, and medium enterprises (MSMEs).

Banawe Soybean Curd Food Products Corporation (BSCFPC), which produces soy milk, taho, and bean curd sheet products, also generates 200kg to 300kg of okara as a byproduct. They linked with the UST team through the DOST’s Government-Academe-Industry or GAIN workshop held in August 2019, and the one-year research project to make use of okara officially commenced on June 6, 2021.

The world production of okara, mostly coming from Asian countries, is about 1.4 billion tonnes, according to the team’s presentation. This large quantity of food byproduct is discarded or used as animal feed. To reduce food waste, the okara will be made into a high-volume food product, such as sausages.

The project’s team leader Arenas shared in an interview that, “Currently, there is a strong market demand for sausages, but unfortunately, high consumption of processed meat products like sausages is associated with an increased risk of chronic diseases. Thus, we envision a healthy vegan sausage made from okara, which is free of artificial food coloring and chemical preservatives.”

Okara is a low-cost source of bioactive compounds that are good for human health. It is high in dietary fiber and contains an appreciable amount of protein, oil and phytochemicals, such as isoflavones, added Arenas.

At present, the product is still being finalized to determine the ideal formulation and the team plans to conduct chemical analyses to determine its nutrient composition.

The team is composed of Research Center for Natural and Applied Sciences (������Ƶapp) researchers, Assoc. Prof. Elizabeth H. Arenas, Ph.D., who teaches at the Food Technology Department, and Assoc. Prof. Franelyne P. Casuga, Ph.D., who is the Laboratory Supervisor of the Pharmacy Department. With them are research assistants Mr. Kevin Rae Ngo and Ms. Kerstin Mariae G. Ponsaran, who are UST BS Biochemistry graduates, and laboratory aide Chelsea Apple T. Torio.

The project is expected to end on June 5, 2022. Once completed, the product formulation and process will be adopted by BSCFPC.

Dagohoy, O.P. said in his message. “Pinapatunayan ito ng napakaraming mahuhusay at kapuri-puring indibidwal na mula sa iba’t-ibang larangan na nagmula sa ating pamantasan,”

According to Fr. Dagohoy, the theme underscores the relationship between dignity and quality. “Ang dignidad ng guro ay nakabase sa kanyang atas, sa kanyang mandato, sa kanyang responsibilidad; samakatuwid, sa kanyang tungkuling ginagampanan: ang paghubog sa mga kamalayan upang masusing timbangin ang katwiran at turuan ang mag-aaral kung papaano umiwas sa panlilinlang, manindigan sa katotohanan, at ipaglaban ang katarungan.”

“Ang saligan ng dignidad ng pagiging guro ay ayon sa antas ng kanyang pagtupad sa atas na iginagawad sa kanya; ito ang nag-aangat sa guro. Ginagawa siyang kakaiba at nagtatangi sa kanya sa ibang mga larangan,” Dagohoy added.

Give Students a Chance

Honorary Speaker Prof. Gerardo Janairo, PhD, De La Salle University Chancellor and a Thomasian from the College of Science, recalled his days in UST as a BS Chemistry student who spent his college days with a bad start. Janairo turned this around, though, credited his Thomasian professors for giving him a lending hand in times of trouble and most especially in retaking the bar exams. “Sila ang mga tao na nagbigay ng inspirasyon sa akin at nagbigay ng pag-asa,” he said.

As a professor, Janairo said he preferred to handle “repeater sections” and underscored his love for both his profession and his students. Being a product of second chances himself, Janairo justified that he will do what he can to bring the best of his students: “Buong tiyaga ko silang tinuturuan, tinutulungan, at binibigyan ng pag-asa. Marami akong mag-aaral na nabigyan ng pagkakataon tulad ng ginawa ng dati kong mga guro sa UST.”

The annual recognition program conferred the following awards: Gawad Benavides (for length of service); Gawad San Alberto Magno (for outstanding research); Gawad Santo Domingo (for outstanding community development program); Gawad San Lorenzo Ruiz (for outstanding achievement, as recognized nationally or internationally); and the Hall of Fame Award (for receiving three awards in the Dangal ng UST, except the Gawad Benavides).
